About this role

Lake Geneva Country Meats is looking for an experienced Meat Cutter to join our custom processing team.


This position will have a focus on band saw work. The primary job responsibility will be to run our band saw and cut primals from our breaking table into finished cuts, as well as helping with grinding customer's trim and making burgers.


This position's primary focus will be in our custom processing department, returning each customer's meat to them, following their cutting instructions. Retail meat cutting skills translate well to this position, but you will learn new things and experience greater variety with customer requests. 


Additionally, you will help cut for the retail meat counter as needed, and work on wild game orders during the season.


This is a full-time position with Monday-Friday hours and benefits such as a retirement plan, PTO, and an employee discount.

Essential functions

  • Operate meat processing equipment such as knives, handsaws, and bandsaws to fabricate retail cuts of meat from subprimals.
  • Assist with grinding meat and making burger patties.
  • Evaluate the quality of products and ensure LGCM standards are met.
  • Follow USDA guidelines to produce safe food.
  • Keep workplace clean and participate in cleaning and sanitation duties.


Competencies

  • Possess knowledge to identify beef, lamb, pork, and poultry primals, sub-primals, and retail cuts.
  • Master techniques of how to clean, cut, trim, bone, tie, and grind the above products.
  • Excellent communication skills and a team-oriented attitude.
  • Excellent organizational skills and attention to detail.


Work environment

This position works on our processing floor and frequently moves in and out of coolers and freezers. This position directly works with animal carcasses and must be able to tolerate working near said carcasses, blood, and other fluids.


Physical requirements

This position must be able to:

  • Fluently communicate verbally and in writing in the English language.
  • Lift up to 80 pounds.
  • Move on a hard floor for the entirety of a shift.
  • Reach items up to seven feet high, with the help of ladders / stools if necessary.
  • Operate in a variety of temperature environments from a chilled, cutting room floor that can be a wet environment, to coolers kept in the 40º range, to freezers that are kept in the 0º range.


Education and experience

  • At least 1 year of meat cutting experience, including bandsaw experience.
