- Prepare, shape, and craft a wide variety of authentic dim sum items (such as dumplings, buns, and rolls) from scratch daily with precision and high quality.
- Ensure consistent taste, texture, and visual presentation of all dim sum products in compliance with hotel standards.
- Manage daily food preparation, ingredients stocking, and proper storage of raw materials to maintain freshness and minimize food waste.
- Maintain strict adherence to food safety, hygiene, and sanitation regulations (HACCP) in the dim sum preparation area.
- Coordinate with the Chinese Sous Chef and Executive Chef to plan menus, introduce seasonal dim sum specials, and manage food costs.
- Train, supervise, and mentor commis chefs and kitchen staff on traditional dim sum techniques and recipes.
