Commis I - Pastry & Bakery

Job Brief

We are looking for an experienced Commis I to prepare and bake a wide range of pastry and bakery items with strong independence. You will lead a pastry task or station, ensure high standards of taste and presentation, and guide junior pastry staff during service. This role suits someone with solid pastry experience who is ready to step closer to a Pastry Chef de Partie level.

Key Responsibilities

•  Prepare, bake, and finish a wide range of pastry and bakery items to the company's quality standards.

•  Take full charge of an assigned pastry task or station during service with minimal supervision.

•  Manage stock levels for the pastry station, including ordering, storage, and minimizing waste.

•  Guide, train, and supervise Commis II and Commis III in the pastry section.

•  Ensure consistency in taste, texture, and presentation across all pastry and bakery items.

•  Follow food safety, hygiene, and cleaning standards set by the company and local health authorities.

•  Support the Pastry Chef de Partie or Sous Chef Pastry with menu prep, tastings, and special events.

•  Pastry or bakery diploma or certificate is an advantage; further training or certification is a plus.

•  At least 2 to 3 years of pastry or bakery experience, including time as a Commis II or similar role.

•  Strong knowledge of baking techniques and food safety; able to lead a station and work well under pressure.
